Nice bike you have there, I take it that it runs as well as it looks.
My answer to your question is simple , it's only worth what somebody would pay for it, hopefully you get a couple of people who want it bidding it up on Ebay .
But if your not selling then compare it to another Japanese 350 two stroke from the same era in that condition, stick on another 20% for rarity value and I'd reckon between £6000-£8000
I'm also basing that on the fact I'm rebuilding a GTR just now as well and my total outlay is likely to be about the lower price, if I do and I seriously hope not spend my upper estimate then my value of the bike will increase.
When Bridgestone GTR's came out they were similarly priced to a new Triumph Bonneville and try buying a mint one of those for less than £12,000, it ain't happening.
But the Triumph has more followers so your really only looking at collectors of rare bikes.
That probably never helped but it is my opinion, I reckon the only people who can put a realistic value on it are an auction house, you might want to ask one of them.

Steve, I have no idea who you're insured with, but if you don't have Hagerty Classic Insurance, you might want to check them out. They are very reasonable and you can also get a "Stated Value" policy from them.

I think Colin is dead on with the value. However, to cover your bases and account for appreciation, I'd go with a $15,000 policy.  :o

Steve, the other way to get a handle on the value is to add up the initial acquisition cost for the bike, the parts spending, restoration work (rechrome, vapor blast, powder coat, zinc plating, etc.), and the value of your labor hours. Since I expect you are not selling and this is for "insurance purposes" as the appraisers say. The cumulative value you get from the spending and labor math plus some "rareness" uplift is the number to use. This is what you would have to layout to replace your VERY NICE GTR, and that is getting more and more difficult to do...
